12 slices bread, preferably stale
6 eggs
1 1/2 c. milk
1 tbsp. granulated sugar
2 tsp. pure vanilla extract
1 tsp. ground cinnamon
1/2 tsp. kosher salt

Preheat oven to 350° and grease a 12-cup muffin tin with cooking spray. Cut bread into ½” cubes and set aside.
In a large bowl, beat eggs, milk, sugar, vanilla, cinnamon, and salt until mixture is smooth. Add bread pieces and toss until the bread has absorbed most of the liquid.
Divide mixture between muffin tin cups, pressing down lightly on each to make muffin more compact.
Bake until bread is toasted and muffins are cooked throughout, about 25 minutes. Let cool in muffin tin for 5 minutes.
